Flam Reserve Cabernet Sauvignon 2013 - Magnum

Our Cabernet Reserve is a blend of 86% Cabernet Sauvignon 5% Syrah 5% Petit Verdot and 4% Cabernet Franc sourced from our best plots in the Dishon Ben-Zimra (Upper Galilee).

The grapes were carefully selected and hand-harvested in early morning hours from low yielding vines Vinification: At the winery the grapes are sorted destemmed and then crushed. The fermentation takes places in stainless steel temperature controlled tanks at 26-28 degrees for 15 days with regular remontage in order to extract colour aromas and varietal character. The wine is then pressed left to clarify naturally and moved to our cellars for ageing. Maturation: The wine ages in French oak barrels of which 50% are new and 50% one to two years old. Each varietal ages separately for 14 months after which the final blend takes place. After bottling the wine is aged for an additional 10 months in our cellars.

Drinks well now but will improve over the next 10 to 15 years.

The first months of 2012 where cold and damp with lower than average temperatures and a very wet winter. Soon it turned into an early summer. This early warm-up helped the grapes reach full and homogeneous maturity. The first grapes where harvested on July the 25th and reached the winery in perfect ripening condition. The warm summer days helped the wines of 2012 obtain intensity and complexity of flavors while the cold winter weather helped retain crisp acidity which balances the fruitiness and adds elegance and finesse. Winemaker notes: The nose is generous and perfumed with fresh fruit notes a soft herbaceous note and a hint of soft oak spices. Rich and elegant the wine an impressive fruit concentration complex oak spices notes good and wellrounded tannins all balanced by fresh mineral acidity. The finish is long.
